White Summer Wine Recipe

Blackberry Buratta Paired with 2021 Viognier

1 Buratta
8oz Blackberries (Save 5 nice ones for garnish)
¼ cup Sugar
½ cup Viogner
1 French Baguette
2 tbs Extra Virgin Olive Oil ¼ cup Ghee or Clarified Butter

1. Gently rinse blackberries then place them into a 2 qt saucepan.
2. Bring blackberries over high heat for 1-2 minutes
3. Add the ½ cup Viogner and ¼ cup Sugar
4. Bring to a simmer
5. Allow contents to cool before placing contents into a blender to puree
6. Melt the Ghee or Clarified Butter
7. Cut the Baguette into ½inch rounds.
8. Brush with Ghee or clarified butter and toast in a 350 degree oven until lightly toasted
9. Take the burrata out of its package and place in a bowl for plating.
10. Strain out the seeds from the blackberry sauce.
11. Spoon out a dollop onto the burrata and place on a plating bowl.
12. Drizzle some of the blackberry syrup onto the top of the burrata.
13. Drizzle with Extra Virgin Olive Oil and garnish with a couple fresh blackberries
14. Pour a glass of Viogner and place a couple blackberries in the glass.
15. Enjoy with 1-3 people.
